The name "Alden Tae's" is a play on the Italian expression "al dente", which literally means "to the tooth" in English. It is usually used to describe pasta that has been cooked so as to be firm but not hard.

"Indochine" is the French word for Indochina, an ill-defined term for an area of Asia between India and China, and a location not generally associated with the traditionally Italian pasta. This would seem to indicate that the restaurant's menu is a mix of Indian, Chinese, Italian and possibly even French cuisine.
